We are trying to get a septic permit to build a barn/winery building we hope to open in 3 -4 yrs. They are asking for water usage records from 3 different wineries. Can anyone help me with this information? We are only going to produce 600 cases annually and had estimated 6 gallons per gallons of wine produced. Thank you.
